A spin on the classic Rob Roy and Manhattan cocktail swaps vermouth for port. This scotch-tail incorporates trending ingredients like balsamic vinegar, dates and infusions and garnished with an iconic blue-cheese stuffed olive.

INGREDIENTS

Ingredients Unit
The Glenlivet 14 Year Old infused with rosemary*
2 Parts
Ruby Port
0.75 Parts
Angostura Bitters
2 Dashes

METHOD

  1. Create The Glenlivet rosemary infusion
  2. Combine The Glenlivet and ruby port in a mixing glass with ice until chilled.
  3. Strain into a martini glass and top with bitters.
  4. Garnish with a blue cheese stuffed date.

*Infusion: Fill a mason jar with four 3-inch-long sprigs of rosemary. Top with 12 ounces (roughly half a bottle) of The Glenlivet 14 Year Old. Let rest overnight.

**Blue Cheese Stuffed Date: Slice dates to create a pocket. Fill with blue cheese. Drizzle with balsamic vinegar and top with black pepper. Serve room temp.
