The Last King

This pineapple cocktail is a great way to introduce people to the delicious flavours of The Glenlivet. Pineapple has long been held as a symbol of hospitality and it's universally loved flavour. When mixed in this refreshing summer cocktail the flavours help highlight the smooth, fruity style of The Glenlivet Founder's Reserve whisky.

Spice-Roasted Pineapple Syrup
25 ml
Freshly Squeezed Lemon Juice
20 ml
Cardamom Pod (for the Syrup)
5 pods
Star Anise (for the Syrup)

Cumin (for the Syrup)

Cloves (for the Syrup)

3 quills
Brown Sugar (for the Syrup)
200 g
Pineapple (for the Syrup)
Pineapple Juice (for the Syrup)
200 ml
Caster Sugar (for the Syrup)
200 ml

METHOD

  1. Shake all ingredients with cubed ice.
  2. Strain over hand-cracked ice in a rocks glass.
  3. Garnish with a wedge of fresh pineapple.

The Spice-roasted Pineapple Syrup

  1. Take the cardamom pods, the star anise, the grated nutmeg, the cumin, the cloves and the cinnamon and crush in a pestle and mortar.
  2. Mix the finely ground spices with the brown sugar and sprinkle onto thick slices of pineapple that have been skinned.
  3. Place the pineapples in an oven at 120°C for fifteen minutes to gently roast.
  4. Place the roasted pineapple, the pineapple juice and the caster sugar in a blender, strain the syrup to remove any pineapple.
